Ginger Mango Seitan December 31st, 2007
Ingredients
1 tsp. Powdered Ginger
1 tsp. Mango Powder
1 box Seitan (about 1 cup)
1/4 cup Olive Oil
1 cup of chopped vegetables

Preparation
Cube Seitan, put oil in frying pan.  
Add Seitan and veggies to oil and heat.   Stir occasionally.
After 5 minutes, sprinkle with Mango Powder and Powdered Ginger, cook for 10 minutes more.
Serve with warm tortillas and chocolate soymilk.

PB Toast with Seitan Veggie Hash December 30th, 2007
i.e. Peanut Butter Seitan Skillet
Ingredients
1/3 cup chopped onions
2 cloves garlic (minced)
2 ribs of celery ripped & chopped
5 baby carrots, sliced
1 small red potato,  chopped
1 box Seitan (about 1 cup)
Salt & Pepper
Powdered Ginger
Aminos
Cinnamon
Bread
Peanut Butter

Preparation:
Put onions, garlic, and celery into frying pan with a little oil.  Saute.  
Add carrots,  potatoes and cubed Seitan.  
Season with Salt & Pepper, Cinnamon, Ginger, and Aminos.
Saute longer.
Toast bread and smear it with Peanut Butter.
Serve sauted mix on or next to PB toast.  We also would recommend Banrock Station Chardonnay with this meal.


April 20th Brownies
April 20th, 2007
Ingredients
1/2 cup Cocoa Powder
2/3 cup  Melted Vegan margarine or light Olive Oil
1 1/2  cup Sugar  (vegan)
1/2 cup Chocolate Soy Milk
Several squirts of Chocolate Syrup
2 Tbs. Ground Flax Seeds + 6 Tbs. Orange Juice  (pre-combined)
1 cup Unbleached White Flour
3/4 cup Whole Wheat Flour
1 tsp. Baking Powder
1 tsp. Salt
Ground Hemp Seeds and Chocolate Chips to taste

Preparation
Preheat oven to 350 degrees.  Grease the bottom of your favorite brownie pan.  Mix together the first six ingredients.  
Combine the next four ingredients and add to prior mixture.  Add seeds and chips as desired.
Pour into prepared pan; bake for 25 minutes.  Lick the bowl.  
Please allow brownies to cool completely before cutting.  We know it's hard, but trust us, it's worth it.
P.S. Some of us prefer them cold from the fridge for a tastier, chewier consistency... (do not put in fridge till after they cool)

Hash Brown Biscuits March 11, 2007
Ingredients
1 Potato
Olive Oil
Flour

Preparation
Wash off potato, leave skin on and shred with coarse cheese grater onto plate.
Press out liquid from gratings with paper or cloth towels.  Use enough applications to soak up majority of liquid.
Dust gratings with flour and mix, repeat several times until patties can be formed without falling apart.
Coat frying pan with olive oil, warm on stove.
Form gratings into patties and cook till both sides are medium to dark brown.
Enjoy!
P.S. Spices of your choosing are recommended to be added when mixing in flour...

Orange Cocoa Pancakes March 11, 2007
Ingredients
Tbs. Cocoa Powder (or more to taste, I use about 4 Tbs. freshly grated pure cacao)
1 1/4 cup Flour
1
Tbs. Baking Powder
1 cup Soymilk
Tbs. Olive Oil
1 tsp. Orange flavoring
1/4 cup Orange Juice
2 Oranges

Preparation
Make orange zest by taking outer layer of oranges off with a fine cheese grater.
Combine dry ingredients and wet ingredients (including orange zest) individually.
Mix wet and dry batches together.
Cover the mix and let it sit for ~15 minutes before cooking for exquisite pancakes.  It's worth it!
P.S. Those of you who may know what Aebleskivers are can also use this recipe for tastier
"Turtle Eggs".
P.P.S.  I particularly enjoy these pancakes with a melty mix of peanut butter and maple syrup on top.

Munchie Platter  December 3, 2007
Ingredients:
1 Bag Vegan Marshmallows (cow and pig-hoof free!)
1 Bag Organic Licorice
1 Box Amaranth Graham Crackers
1 Maya Gold Chocolate Bar (by Green & Black chocolate)

Preperation:
Place a handful of Vegan marshmallows, Organic Licorice, and Amaranth Graham Crackers on plate.
Break Maya Bar into chunks and place on plate.
Experiment with combinations and enjoy.
Repeat,  with new food items as necessary.
